Recipe of the Week: Blueberry Bagel with Peanut Butter

Jamál (Beauty), 1 Ayyám-I-Há (Intercalary Days), 168 BE – Sunday, February 26, 2012 about Pacific Time

My mother likes peanut butter on her bagels, so three or four times a month I toast a bagel spread it with peanut butter.

Ingredients:

1 blueberry bagel
1 tablespoon of peanut butter

Directions:

Step 1: Assemble ingredients
Step 2: Cut the bagel in half
Step 3: Toast the bagel
Step 4: Spread the peanut butter, after divide the peanut butter between the two halves of the bagel

Serving suggestions:

Amy type of breakfast food or drink, my mother likes to have grape or orange juice and coffee when she eats her bagel.

Note: You do not have to use blueberry bagels with this recipe, any type of bagel will work. I have not tried this recipe with onion or salted bagels, but please feel free to experiment and be creative.

My Mother ate my bagel

My Mother at my bagel, which is not as funny as it may sound or perhaps it is. It is my own fault for leaving my bagel unguarded. Mom has Alzheimer’s disease, so her short-term memory is not good. I fixed us bagels for breakfast; I put peanut butter on her bagel and margarine on mine. I then served Mom her breakfast, before going into another room without my bagel. When I returned to the kitchen Mom had picked up my bagel thinking, it belonged to her.

It is not a good idea to inform an Alzheimer’s sufferer that the bagel she just picked up is not her breakfast. The best response is to take a deep breath and fix something else to eat. I am not sure what I had for breakfast, probably some leftovers. I did learn one thing though and that is to take my food with me when I leave the kitchen.

The bagel is no big deal; however, cereal could be a problem. Mom is on a low fiber diet and I am on a high fiber diet. Mom cannot have cereal with more then two grams of dietary fiber and my cereal has over six grams. As you can imagine, if Mom ate my cereal it could cause some messy issues.

I had blueberry bagels for breakfast

I'm getting used to my lower plate. It's getting easier to eat with the teeth in my mouth. The last dental adjustment seemed to do the trick. This morning for breakfast I ate a blueberry bagel. I cut the bagel in half and toasted it. Then I cut each half into four pieces and put butter on each piece.

It wasn't easy, but I did eat the entire bagel. I even managed to bite one of the pieces in half. I'm improving. I'm getting used to my dentures. I'm learning to eat again. Right now, I'm eating crackers. The crackers seem a bit easier to deal with because I break them into small pieces and eat one piece at a time. I can even bite a piece off the cracker if I want.
